A comforting and hearty soup made with tender chicken, egg noodles, and flavorful broth.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 cups egg noodles
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.

  2. Add the onion, carrots, celery, and garlic, and sauté for 5 minutes, or until tender.

  3. Pour in the chicken broth and bring to a boil.

  4. Reduce heat to a simmer and add the shredded chicken and egg noodles.

  5. Cook for 10-15 minutes, or until the noodles are tender.

  6. Season with salt and pepper to taste.

  7. Ladle into bowls and top with fresh parsley if desired.
