  • 1 lb ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup water
  • 1 can diced tomatoes
  • 1 cup small pasta (such as ditalini or elbow macaroni)
  • 1/4 cup grated mozzarella cheese
  • 4 slices of bread
  • 2 tbsp butter
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the ground beef, bread crumbs, Parmesan cheese, parsley, egg, salt, and black pepper. Mix until well combined.

  2. Shape the mixture into small meatballs, about 1 inch in diameter.

  3. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and cook until softened.

  4. Add the beef broth, water, diced tomatoes (with juice), and meatballs to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.

  5. Meanwhile, cook the pasta according to package instructions. Drain and set aside.

  6. In a separate pan, melt the butter over medium heat. Add the garlic powder and stir. Place the bread slices in the pan and cook until golden brown on both sides. Remove from heat and sprinkle with grated mozzarella cheese.

  7. To serve, divide the cooked pasta among 4 bowls. Ladle the soup over the pasta and top with the cheesy croutons. Season with salt and pepper to taste.
