Serves:
Ingredients
- 2 boneless, skinless chicken breasts, thinly sliced
- 4 cups chicken broth
- 1 cup sliced mushrooms
- 1 cup shredded carrots
- 1/2 cup sliced bamboo shoots
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon cornstarch, dissolved in 2 tablespoons water
- 2 eggs, beaten
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
-
In a large pot, bring the chicken broth to a boil. Add the chicken slices and cook until they are no longer pink, about 5 minutes.
-
Add the mushrooms, carrots, and bamboo shoots to the pot and simmer for another 5 minutes.
-
In a small bowl, mix together the rice vinegar, soy sauce, and sriracha sauce. Pour the mixture into the pot and bring it to a simmer.
-
Slowly pour in the cornstarch mixture, stirring constantly, until the soup thickens slightly.
-
Reduce the heat to low and slowly pour in the beaten eggs while stirring the soup in a circular motion. This will create ribbons of cooked egg throughout the soup.
-
Stir in the sesame oil and season with salt and pepper to taste.
-
Ladle the soup into bowls and garnish with chopped green onions.
