  • 2 cups cooked chicken, shredded
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels
  • 4 cups chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, and bell pepper, and cook until softened.

  2. Add the diced tomatoes, black beans, corn, chicken broth, chili powder, cumin, salt, and pepper. Stir well to combine.

  3. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes.

  4. Add the cooked chicken and simmer for another 10 minutes, until heated through.

  5. Serve the chicken chili soup hot, topped with shredded cheese, sour cream, and chopped cilantro if desired.
