How To Make King Ranch Chicken Casserole

Ingredients

  • 2 cups cooked chicken, shredded
  • 6 corn tortillas
  • 1 can diced tomatoes with green chilies (10 oz)
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced celery
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, combine the cooked chicken, diced tomatoes with green chilies, cream of chicken soup, sour cream, diced onion, bell pepper, celery, garlic, chili powder, cumin, salt, and pepper. Mix well.

  3. Grease a 9×13 inch baking dish. Layer half of the tortillas on the bottom of the dish. Top with half of the chicken mixture, spreading it out evenly. Repeat with another layer of tortillas and the remaining chicken mixture.

  4. Sprinkle the shredded cheddar cheese over the top.

  5. Bake in the preheated oven for 30 minutes, or until heated through and cheese is melted and bubbly.

  6. Remove from the oven and let it cool for a few minutes before serving.

  7. Serve hot and enjoy!
