  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 500g mushrooms, sliced
  • 4 cups vegetable broth
  • 1 tsp thyme
  • Salt and pepper, to taste
  • 1 cup low-fat milk
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until the onions are translucent.

  2. Add the sliced mushrooms to the pot and cook until they have softened.

  3. Pour in the vegetable broth and add thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes.

  4. Remove the pot from heat and let it cool slightly. Use an immersion blender to puree the soup until smooth.

  5. Return the pot to low heat and stir in the low-fat milk. Cook for another 5 minutes.

  6. Serve the mushroom soup hot, garnished with fresh parsley.
