Ingredients

  • 2 leeks, white and light green parts only, thinly sliced
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 large potatoes, peeled and cubed
  • 1 cup heavy cream
  • 8 ounces smoked salmon, flaked
  • Salt and pepper to taste
  • Fresh dill, chopped (for garnish)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the leeks and garlic and cook until softened, about 5 minutes.

  2. Add the broth and potatoes to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.

  3. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and puree in batches until smooth.

  4. Return the soup to low heat and stir in the heavy cream and smoked salmon. Cook for an additional 5 minutes, until heated through. Season with salt and pepper to taste.

  5. Ladle the soup into bowls and garnish with fresh dill. Serve hot.
