Ingredients
- 2 medium leeks, white and light green parts only, thinly sliced
- 2 tablespoons unsalted butter
- 1 pound Yukon gold potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt, to taste
- Freshly ground black pepper, to taste
- Chives, thinly sliced, for garnish

In a large pot, melt the butter over medium heat. Add the leeks and cook until softened, about 5 minutes.

Add the potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 20 minutes.
