  • 2 medium leeks, white and light green parts only, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 pound Yukon gold potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chives, thinly sliced, for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the leeks and cook until softened, about 5 minutes.

  2. Add the potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 20 minutes.

  3. Using an immersion blender or a regular blender, puree the soup until smooth.

  4. Stir in the heavy cream and season with salt and pepper to taste.

  5. Transfer the soup to a bowl or individual serving bowls and refrigerate until chilled, about 2 hours.

  6. Serve the vichyssoise cold, garnished with freshly sliced chives.
