- 6 cups vegetable broth
- 2 tablespoons curry powder
- 1 tablespoon soy sauce
- 1 teaspoon ginger, grated
- 1/2 teaspoon garlic, minced
- 1/4 teaspoon red pepper flakes
- 8 ounces udon noodles
- 1 cup sliced mushrooms
- 1 cup chopped bok choy
- 1 carrot, julienned
- 1/2 cup frozen peas
- 1/4 cup chopped green onions
- Salt and pepper to taste

In a large pot, bring vegetable broth to a boil. Add curry powder, soy sauce, ginger, garlic, and red pepper flakes. Simmer for 10 minutes.
