  • 8 ounces of chicken breast, sliced
  • 8 ounces of mushrooms, sliced
  • 4 cups of chicken broth
  • 4 cloves of garlic, minced
  • 1 tablespoon of soy sauce
  • 1 tablespoon of fish sauce
  • 8 ounces of noodles (such as udon or ramen)
  • Salt and pepper, to taste
  • Green onions, chopped (for garnish)

Instructions

  1. In a large pot, heat some oil over medium heat. Add the minced garlic and cook until fragrant.

  2. Add the chicken slices to the pot and cook until they are no longer pink. Remove them from the pot and set aside.

  3. In the same pot, add the sliced mushrooms and cook until they have softened.

  4. Pour in the chicken broth, soy sauce, and fish sauce. Bring the mixture to a boil.

  5. Reduce the heat to a simmer and add the noodles to the pot. Cook until the noodles are tender.

  6. Return the cooked chicken to the pot and season with salt and pepper to taste.

  7. Serve the soupy chicken and mushroom noodles hot, garnished with chopped green onions.
