How To Make Spiced Chicken Meatballs with Noodles, Basil & Broth

- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 4 cups chicken broth
- 8 oz noodles (such as spaghetti or udon)
- 1 cup fresh basil leaves, torn
- Lime wedges, for serving (optional)
Instructions

In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, garlic, cumin, coriander, paprika, cayenne pepper, salt, and pepper. Mix until well combined.

Shape the mixture into small meatballs, about 1 inch in diameter.

In a large pot, bring the chicken broth to a boil. Add the meatballs and noodles. Cook according to the package instructions until the meatballs are cooked through and the noodles are tender.

Add the torn basil leaves to the pot and stir to combine.

Serve the spiced chicken meatballs with noodles and broth in bowls. Add a squeeze of lime juice, if desired.
