Ingredients
- 2 boneless, skinless chicken breasts
- 8 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper, to taste
- 8 oz egg noodles
Instructions

In a large pot, bring the chicken broth to a boil. Add the chicken breasts and cook for 10-15 minutes, or until cooked through. Remove the chicken from the broth and shred it using two forks.

Return the shredded chicken back to the pot with the broth. Add the carrots, celery, onion, garlic, dried thyme, and dried parsley. Season with salt and pepper.

Bring the soup to a simmer and cook for 15 minutes, or until the vegetables are tender.

In a separate pot, cook the egg noodles according to the package instructions. Drain and set aside.
