Ingredients

  • 1 pound chicken breast, boneless and skinless
  • 4 cups chicken broth
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 1 cup egg noodles
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Place chicken breasts in the slow cooker. Add chicken broth, carrots, celery, onion, garlic, dried thyme, dried parsley, and bay leaf. Season with salt and pepper.

  2. Cook on low for 4-6 hours or until chicken is cooked through and tender.

  3. Remove the chicken breasts from the slow cooker and shred using two forks. Return shredded chicken to the slow cooker.

  4. Stir in egg noodles and continue cooking for an additional 30 minutes, or until the noodles are cooked.

  5. Remove the bay leaf and garnish with fresh parsley before serving.

  6. Adjust seasoning with salt and pepper if needed.
