Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cups of diced potatoes
  • 1 cup of diced onions
  • 1 cup of diced carrots
  • 2 cloves of garlic, minced
  • 1 tsp of dried thyme
  • 1 tsp of dried rosemary
  • 1 tsp of paprika
  • 1 cup of chicken broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large casserole dish, arrange the chicken breasts in a single layer.

  3. Add the diced potatoes, onions, carrots, minced garlic, dried thyme, dried rosemary, and paprika.

  4. In a separate bowl, whisk together the chicken broth and heavy cream. Pour the mixture over the chicken and vegetables.

  5. Season with salt and pepper to taste.

  6. Cover the casserole dish with foil and bake for 45 minutes.

  7. Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the potatoes are tender.

  8. Garnish with fresh parsley before serving.
