  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 jalapeno, diced (optional for added heat)
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 cup vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, minced garlic, bell pepper, and jalapeno (if using). Cook until vegetables are softened, about 5 minutes.

  2. Add diced tomatoes, kidney beans, black beans, vegetable broth, chili powder, cumin, paprika, salt, and pepper to the pot. Stir well to combine.

  3. Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes, stirring occasionally.

  4. Taste and adjust seasonings as needed. If you prefer a thicker chili, use a spoon to mash some of the beans against the side of the pot.

  5. Serve hot with your favorite toppings, such as shredded cheese, sour cream, and chopped cilantro.
