- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 jalapeno, diced (optional for added heat)
- 1 can diced tomatoes
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 cup vegetable broth
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro

In a large pot, heat olive oil over medium heat. Add diced onion, minced garlic, bell pepper, and jalapeno (if using). Cook until vegetables are softened, about 5 minutes.

Add diced tomatoes, kidney beans, black beans, vegetable broth, chili powder, cumin, paprika, salt, and pepper to the pot. Stir well to combine.
