How To Make Malaysian Char Kway Teow

A delicious stir-fried noodle dish with shrimp, Chinese sausage, bean sprouts, and chives, seasoned with soy sauce and chili paste.

Serves:

Ingredients

  • 500g fresh flat rice noodles
  • 200g shrimp, peeled and deveined
  • 100g Chinese sausage, sliced
  • 3 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 2 cups bean sprouts
  • 1/2 cup chives, cut into 2-inch lengths
  • 2 tbsp soy sauce
  • 1 tbsp chili paste
  • 2 tbsp vegetable oil

Instructions

  1. Heat 1 tablespoon of oil in a wok or large skillet over high heat. Add garlic and stir-fry for 30 seconds.

  2. Add shrimp and Chinese sausage and stir-fry for 3-4 minutes until shrimp turn pink and sausage is slightly crispy.

  3. Push the shrimp and sausage to one side of the wok, add another tablespoon of oil to the other side, then add beaten eggs and scramble until cooked.

  4. Add noodles, soy sauce, and chili paste, and stir-fry for 3-4 minutes until noodles are heated through and evenly coated with sauce.

  5. Add bean sprouts and chives, and stir-fry for another minute until vegetables are cooked but still crispy.

  6. Serve hot.
