  • 1.5 lbs beef stew meat, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 2 tbsp vegetable oil
  • 3 cups beef broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, peeled and chopped
  • 3 stalks celery, chopped
  • 2 potatoes, peeled and chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a medium bowl, toss the beef with the flour until evenly coated.

  2. In a large skillet over medium-high heat, heat the oil until hot. Add the beef and cook until browned on all sides, about 5 minutes.

  3. Transfer the beef to a 6-quart slow cooker. Add the beef broth, onion, garlic, carrots, celery, potatoes, thyme, rosemary, bay leaf, salt, and pepper. Stir to combine.

  4. Cover and cook on low for 6 hours or on high for 3-4 hours, until the beef is tender.

  5. Discard the bay leaf. Serve hot, garnished with fresh parsley if desired.
