How To Make Red Lentil Curry Recipe

Ingredients
- 1 cup red lentils
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 tomato, diced
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp chili powder
- 1/2 tsp garam masala
- Salt to taste
- 2 cups vegetable broth
- 1 tbsp oil
- Fresh cilantro for garnish
Instructions

Rinse the red lentils under cold water until the water runs clear. Set aside.

Heat oil in a large pot over medium heat. Add the onions and cook until they turn translucent.

Add the garlic and ginger to the pot and cook for another 2 minutes.

Add the diced tomatoes and cook until they soften.

Stir in the cumin powder, coriander powder, turmeric powder, chili powder, garam masala, and salt. Mix well.

Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil.

Reduce the heat to low, cover the pot, and simmer for about 25-30 minutes or until the lentils are cooked and tender.

Stir occasionally to prevent sticking to the bottom of the pot.

Serve the red lentil curry hot, garnished with fresh cilantro. Enjoy with rice or naan bread.
