How To Make Zucchini Noodle Shrimp Scampi

Ingredients

  • 4 medium zucchini
  • 1 lb shrimp, peeled and deveined
  • 3 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup chicken broth
  • 1/4 cup white wine (optional)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Using a spiralizer or a vegetable peeler, create zucchini noodles. Set aside.

  2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant.

  3. Add shrimp to the skillet and cook until pink and opaque.

  4. Remove the shrimp from the skillet and set aside.

  5. In the same skillet, add chicken broth and white wine. Bring to a simmer.

  6. Add the zucchini noodles to the skillet and cook for 2-3 minutes, until tender.

  7. Return the shrimp to the skillet and toss with the noodles.

  8. Squeeze lemon juice over the dish and season with salt and pepper.

  9. Garnish with fresh parsley.

  10. Serve hot and enjoy!
