How To Make Low Carb Shrimp Scampi Recipe

A healthy low carb version of classic shrimp scampi.

Serves:

Ingredients

  • 1 lb. shrimp, peeled and deveined
  • 4 tbsp. butter
  • 4 cloves garlic, minced
  • 1/4 tsp. red pepper flakes
  • 1/4 cup chicken broth
  • 1/4 cup dry white wine
  • 1 lemon, juiced
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Season the shrimp with salt and pepper.

  2. Melt the butter in a large pan over medium heat.

  3. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side.

  4. Remove the shrimp from the pan and set aside.

  5. Add the garlic and red pepper flakes to the pan and cook for 1 minute.

  6. Add the chicken broth, white wine, and lemon juice to the pan and bring to a boil.

  7. Reduce the heat and simmer for 2-3 minutes.

  8. Return the shrimp to the pan and toss to coat them in the sauce.

  9. Sprinkle with chopped parsley and serve.
