Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • 8 oz linguine, cooked and drained
  • Lemon wedges, for serving

Instructions

  1. In a large skillet, melt butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

  2. Add the shrimp to the skillet and cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

  3. In the same skillet, add the chicken broth, heavy cream, Parmesan cheese, and lemon juice. Stir well and bring to a simmer. Cook for 5 minutes, or until the sauce has slightly thickened.

  4. Season the sauce with salt and black pepper, to taste. Stir in the chopped parsley.

  5. Add the cooked linguine to the skillet and toss to coat in the sauce.

  6. Return the cooked shrimp to the skillet and toss to combine.

  7. Serve the creamy shrimp scampi hot, garnished with fresh parsley and lemon wedges.
