Ingredients

  • 1 lb bay scallops
  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 tsp dried thyme
  • 1/4 tsp paprika
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large soup pot, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving the bacon fat in the pot.

  2. Add onions and garlic to the pot and sauté until translucent.

  3. Stir in potatoes, chicken broth, thyme, paprika, salt, and pepper. Bring to a simmer and cook until potatoes are tender, about 15 minutes.

  4. Add bay scallops and cook for an additional 3-4 minutes until scallops are opaque and cooked through.

  5. Stir in heavy cream and cook for another 2 minutes to heat through.

  6. Serve hot, garnished with crispy bacon and chopped fresh parsley.
