How To Make Scallop & Apple Salad with Hazelnut Dressing

Ingredients
- 1 pound of scallops
- 2 apples, thinly sliced
- 1/2 cup of hazelnuts, chopped
- 4 cups of mixed greens
- 1/4 cup of olive oil
- 2 tablespoons of apple cider vinegar
- 1 tablespoon of honey
- Salt and pepper to taste
Instructions

In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper to make the hazelnut dressing. Set aside.

Heat a large skillet over medium-high heat. Pat the scallops dry and season with salt and pepper. Cook the scallops for 2-3 minutes on each side until golden and opaque in the center. Remove from heat and set aside.

In a large salad bowl, combine the mixed greens, apple slices, and chopped hazelnuts. Drizzle with the hazelnut dressing and toss to coat evenly.

Divide the salad among plates and top each with scallops.
