  • 1 lb white fish fillets
  • 2 cups mashed potatoes
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup bread crumbs
  • 2 eggs, beaten
  • 2 tbsp vegetable oil

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine the white fish fillets, mashed potatoes, onion, celery, garlic, parsley, lemon zest, lemon juice, salt, and black pepper.

  3. Using your hands, mix the ingredients until well combined.

  4. Shape the mixture into patties, around 1/2 inch thick.

  5. In a shallow bowl, combine the bread crumbs and beaten eggs.

  6. Dip each fish cake into the bread crumb mixture, pressing gently to coat both sides.

  7. In a large skillet, heat the vegetable oil over medium heat.

  8. Add the fish cakes and cook until golden brown on each side, about 4-5 minutes per side.

  9. Transfer the fish cakes to a baking sheet lined with parchment paper.

  10. Bake in the preheated oven for 10 minutes, or until cooked through and crispy.

  11. Serve hot with tartar sauce or aioli.
