Ingredients
- 300g smoked fish, flaked
- 2 eggs
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 cup breadcrumbs
- 2 tbsp chopped fresh cilantro
- 2 tbsp chopped fresh mint
- 1 cup mixed salad greens
- 4 eggs, poached or fried
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions

In a bowl, combine the flaked smoked fish, eggs, chili powder, paprika, cayenne pepper, breadcrumbs, cilantro, and mint. Mix well until combined.

Shape the mixture into small patties and refrigerate for 10 minutes to firm up.

Heat the olive oil in a frying pan over medium heat. Cook the fish cakes for 3-4 minutes on each side, or until golden brown and cooked through.

While the fish cakes are cooking, prepare the herb salad by tossing the mixed salad greens with a drizzle of olive oil, salt, and pepper.

Serve the fish cakes on a bed of herb salad, topped with a poached or fried egg.
