- 4 chicken breasts, boneless and skinless
- 2 medium-sized sweet potatoes, peeled and thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons Thai red curry paste
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

In a small bowl, mix together the olive oil, Thai red curry paste, soy sauce, fish sauce, brown sugar, lime juice, and chopped cilantro.

Season the chicken breasts with salt and pepper.

Lay a sheet of aluminum foil on a baking tray.

Place a chicken breast on each foil sheet, and top with a few slices of sweet potato.

Spoon the Thai curry mixture over the chicken and sweet potatoes.

Fold the foil to create a sealed parcel, making sure to leave some room for steam to circulate.

Place the parcels on the baking tray and bake for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
