Serves:

Ingredients

  • 8 sausages
  • 2 sweet potatoes, peeled and cut into chunks
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large mixing bowl, combine the sausages, sweet potatoes, bell pepper, red onion, garlic, olive oil, dried thyme, salt, and pepper. Toss until everything is evenly coated.

  3. Transfer the mixture to a large baking tray and spread it out in an even layer.

  4. Roast in the preheated oven for 35-40 minutes, or until the sausages are cooked through and the sweet potatoes are tender, stirring once or twice during cooking.

  5. Garnish with fresh parsley and serve hot.
