Ingredients

  • 12 fresh sardines, cleaned and deboned
  • 1 cup breadcrumbs
  • 1/4 cup grated pecorino cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup pine nuts
  • 1/4 cup raisins
  • 1/4 cup extra virgin olive oil
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the breadcrumbs, pecorino cheese, minced garlic, parsley, pine nuts, and raisins.

  3. Season the sardines with salt and pepper.

  4. Divide the breadcrumb mixture evenly among the sardines, pressing it gently into the cavity.

  5. Place the stuffed sardines on a greased baking sheet and drizzle with olive oil.

  6. Bake in the preheated oven for 12-15 minutes or until the sardines are cooked through and the breadcrumbs are golden brown.

  7. Serve the stuffed sardines hot with lemon wedges on the side.
