How To Make Skewered Sardines with Tartare Dressing

Ingredients
- 8 fresh sardines, cleaned and deboned
- 2 tablespoons olive oil
- Salt and pepper, to taste
- For the tartare dressing:
- 1/2 cup mayonnaise
- 1 tablespoon chopped capers
- 1 tablespoon chopped gherkins
- 1 tablespoon chopped fresh parsley
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Instructions

Preheat grill or grill pan.

In a small bowl, mix together all the ingredients for the tartare dressing. Set aside.

Thread the sardines onto skewers, brush with olive oil, and season with salt and pepper.

Grill the skewered sardines for about 3-4 minutes per side, until cooked through and slightly charred.

Serve the skewered sardines hot with the tartare dressing on the side.
