  • 8 large shrimp, peeled and deveined
  • 8 sea scallops
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup black olives, sliced
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1/4 cup white wine
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large baking dish, combine the shrimp, scallops, cherry tomatoes, black olives, sun-dried tomatoes, and garlic.

  3. In a separate bowl, whisk together the white wine, olive oil, lemon juice, oregano, red pepper flakes, salt, and pepper.

  4. Pour the sauce over the seafood mixture in the baking dish and toss to coat everything evenly.

  5. Bake in the preheated oven for 20-25 minutes, or until the seafood is cooked through and opaque.

  6. Remove from the oven and garnish with fresh parsley before serving.
