  • 4 salmon fillets
  • 8 cups mixed greens
  • 1 cup crème fraîche
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the salmon fillets with salt and pepper.

  3. Heat the olive oil in a large skillet over medium-high heat.

  4. Place the salmon fillets skin side down in the skillet and cook for 3-4 minutes until crispy.

  5. Transfer the skillet to the oven and bake for an additional 8-10 minutes until the salmon is cooked through.

  6. In a large bowl, toss the mixed greens with lemon juice, olive oil, salt, and pepper.

  7. Divide the mixed greens onto 4 plates and top each with a salmon fillet.

  8. Spoon a generous amount of crème fraîche over each salmon fillet.

  9. Serve immediately.
