Ingredients

  • 2 large cucumbers, peeled and chopped
  • 1 ripe avocado, peeled and pitted
  • 1 green bell pepper, seeded and chopped
  • 1 small green apple, cored and chopped
  • 1 small onion, chopped
  • 2 cloves of garlic
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh parsley leaves
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cold water

Instructions

  1. In a blender or food processor, combine cucumbers, avocado, bell pepper, apple, onion, garlic, basil, parsley, lime juice, olive oil, salt, and black pepper.

  2. Blend until smooth and creamy.

  3. Gradually add cold water while blending until desired consistency is reached.

  4. Taste and adjust seasoning if needed.

  5. Transfer gazpacho to a bowl and refrigerate for at least 1 hour to chill.

  6. Serve cold in individual bowls or glasses.

  7. Garnish with extra basil leaves, if desired.
