How To Make Easy Poached Salmon with Salsa Verde

Ingredients
- 4 salmon fillets
- 1 lemon, sliced
- 4 sprigs of fresh dill
- Salt and pepper, to taste
- For the salsa verde:
- 1 cup fresh parsley leaves
- 1 cup fresh cilantro leaves
- 2 cloves garlic
- 1/4 cup capers
- 1/4 cup chopped red onion
- 2 tablespoons fresh lemon juice
- 1/2 cup extra-virgin olive oil
- Salt and pepper, to taste
Instructions

Fill a large skillet or deep pan with water and bring it to a simmer over medium heat.

Season the salmon fillets with salt and pepper, then lay them in the simmering water. Add the lemon slices and dill sprigs.

Poach the salmon for about 10-12 minutes, until it is cooked through and flakes easily with a fork.

While the salmon is cooking, prepare the salsa verde. In a food processor, combine the parsley, cilantro, garlic, capers, red onion, lemon juice, and olive oil. Pulse until it forms a coarse sauce. Season with salt and pepper to taste.

Once the salmon is cooked, remove it from the water and place it on a serving dish. Spoon the salsa verde over the top of each fillet.

Serve the poached salmon with salsa verde alongside roasted vegetables or a fresh salad.
