Ingredients

  • 8 oz smoked salmon
  • 1 large cucumber
  • 4 oz cream cheese
  • 2 tbsp fresh dill, chopped
  • 1 lemon, zested and juiced
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine the cream cheese, fresh dill, lemon zest, lemon juice, salt, and pepper. Mix until well combined.

  2. Using a mandoline or a sharp knife, thinly slice the cucumber lengthwise into long strips.

  3. Spread a thin layer of the cream cheese mixture onto each cucumber strip.

  4. Carefully roll up a slice of smoked salmon and place it at one end of the cucumber strip.

  5. Continue rolling until the salmon is fully enclosed.

  6. Repeat with the remaining salmon and cucumber strips.

  7. Serve the salmon and cucumber twists as an appetizer or snack.
