How To Make Salmon & Smacked Cucumber Noodles

Ingredients

  • 4 salmon fillets
  • 2 cucumbers
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Sesame seeds for garnish
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Season the salmon fillets with salt and pepper, then place them on a baking sheet lined with parchment paper. Bake for 10 minutes, or until the salmon is cooked through and flakes easily with a fork.

  2. While the salmon is baking, prepare the cucumber noodles. Using a vegetable peeler or spiralizer, make long, thin noodles from the cucumbers. Place the cucumber noodles in a bowl of ice water and let them sit for about 10 minutes to crisp up.

  3. In a small mixing bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, grated ginger, and minced garlic.

  4. Drain the cucumber noodles and pat them dry with a paper towel. Place them in a clean bowl and pour the dressing over them. Toss well to coat the noodles evenly.

  5. Divide the cucumber noodles onto four plates. Top each plate with a baked salmon fillet. Sprinkle with sesame seeds and garnish with fresh cilantro.

  6. Serve the Salmon & Smacked Cucumber Noodles immediately.
