How To Make Grilled Miso Salmon with Rice Noodles

Ingredients
- 4 salmon fillets
- 4 tablespoons miso paste
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 2 teaspoons grated ginger
- 8 ounces rice noodles
- 1 tablespoon vegetable oil
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 2 green onions, thinly sliced
- 2 tablespoons sesame seeds, for garnish
Instructions

In a small bowl, whisk together miso paste, soy sauce, honey, minced garlic, and grated ginger.

Place salmon fillets in a shallow dish and pour miso marinade over them. Turn to coat evenly and let marinate for at least 10 minutes.

Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.

Heat vegetable oil in a grill pan or skillet over medium-high heat. Remove salmon fillets from the marinade and shake off excess. Grill salmon for about 4-5 minutes per side, or until cooked through and slightly charred.

In a large bowl, toss the cooked rice noodles with cucumber, carrot, and green onions.

Divide the rice noodle mixture among 4 plates and top each plate with a grilled miso salmon fillet.
