- 4 medium-sized potatoes, boiled and diced

- 1/2 cup pitted black olives
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions

In a large bowl, combine the diced potatoes, sliced red onion, and black olives.
