Ingredients

  • 300g prawns, cooked and peeled
  • 1 avocado, diced
  • 200g soya beans, boiled
  • 1 red pepper, diced
  • 1/2 red onion, thinly sliced
  • 1 handful of fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the prawns, diced avocado, boiled soya beans, red pepper, red onion, and fresh cilantro.

  2. In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper.

  3. Pour the dressing over the salad and toss gently to combine.

  4. Serve immediately and enjoy!
