How To Make Salmon & Soya Bean Salad

Ingredients
- 4 salmon fillets
- 1 cup of soya beans
- 4 cups of mixed salad greens
- 1 cucumber, sliced
- 1 carrot, grated
- 1 red bell pepper, sliced
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of chopped fresh mint
- 1/4 cup of chopped peanuts
- For the dressing:
- 2 tablespoons of soy sauce
- 2 tablespoons of rice vinegar
- 1 tablespoon of honey
- 1 tablespoon of sesame oil
- 1 clove of garlic, minced
- 1 teaspoon of grated ginger
Instructions

Preheat your grill to medium-high heat. Season the salmon fillets with salt and pepper, then grill for 3-4 minutes per side, or until cooked through. Set aside to cool.

Cook the soya beans according to package instructions. Drain and rinse with cold water.

In a large bowl, combine the mixed salad greens, cucumber, carrot, bell pepper, cilantro, and mint.

In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger until well combined.

Add the cooked soya beans to the salad greens and toss with the dressing.

Divide the salad onto four plates and top each with a grilled salmon fillet.

Sprinkle with chopped peanuts and serve.
