Ingredients

  • 2 pink grapefruits, segmented
  • 200g prawns, cooked and peeled
  • 1 ripe avocado, sliced
  • 1 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup roasted peanuts, crushed
  • For the dressing:
  • 2 tablespoons tamarind paste
  • 1 tablespoon honey
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 teaspoon chili flakes (optional)

Instructions

  1. In a small bowl, whisk together tamarind paste, honey, lime juice, fish sauce, and chili flakes (if using) to make the dressing. Set aside.

  2. In a large serving bowl, combine grapefruit segments, prawns, avocado slices, red onion, and cilantro.

  3. Drizzle the dressing over the salad and toss gently to coat all the ingredients.

  4. Sprinkle the crushed peanuts on top for additional texture and flavor.

  5. Serve immediately and enjoy the zingy flavors!
