How To Make Prawn Fajitas with Avocado Cream

Ingredients
- 1 pound of prawns, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of chili powder
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper, to taste
- 4 tortillas
- avocado cream:
- 1 ripe avocado
- 1/4 cup of Greek yogurt
- 1/4 cup of cilantro, chopped
- 1/2 lime, juiced
- Salt and pepper, to taste
Instructions

In a large skillet, heat the olive oil over medium heat. Add the garlic, bell peppers, and onion. Cook for 5 minutes, until softened.

In a small bowl, combine the chili powder, cumin, paprika, salt, and pepper. Sprinkle the spice mixture over the prawns and add them to the skillet. Cook for 3-4 minutes, until the prawns are pink and cooked through.

In a blender or food processor, combine the avocado, Greek yogurt, cilantro, lime juice, salt, and pepper. Blend until smooth and creamy.

Warm the tortillas in a dry skillet or microwave.

To assemble the fajitas, spread a spoonful of the avocado cream onto each tortilla. Top with the prawn mixture and fold in the sides of the tortilla.

Serve the prawn fajitas with extra avocado cream and your favorite toppings, such as salsa, sour cream, or guacamole.
