Ingredients

  • 400g prawns, peeled and deveined
  • 2 large sweet potatoes, peeled and grated
  • 2 green onions, finely chopped
  • 1 red chili, finely chopped
  • 2 cloves of garlic, minced
  • 1 inch piece of ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1/4 cup chopped cilantro
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • Cooking oil, for frying

Instructions

  1. In a food processor, pulse the prawns until finely chopped. Transfer to a large bowl.

  2. Add the grated sweet potatoes, green onions, red chili, garlic, ginger, soy sauce, fish sauce, cilantro, and flour to the bowl with the prawns. Mix well to combine.

  3. Heat cooking oil in a large skillet over medium heat.

  4. Take a small handful of the prawn and sweet potato mixture and shape it into a patty. Repeat with the remaining mixture.

  5. Place the patties in the hot skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.

  6. Remove the cooked cakes from the skillet and drain on paper towels to remove any excess grease.

  7. Serve the prawn and sweet potato cakes hot with your choice of dipping sauce.
