How To Make Prawn & Potato Pie

Ingredients
- 500g prawns, peeled and deveined
- 500g potatoes, peeled and diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup of vegetable broth
- 1 cup of heavy cream
- 1 tbsp of butter
- 1 tbsp of flour
- 1 tsp of paprika
- Salt and pepper to taste
- 1 sheet of puff pastry
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 180°C (350°F).

In a large pan, melt the butter and sauté the onion and garlic until softened.

Add the prawns and cook until they turn pink.

Sprinkle the flour and paprika over the prawns and stir well.

Gradually add the vegetable broth and heavy cream, stirring constantly until the sauce thickens.

Add the diced potatoes and season with salt and pepper. Cook for another 5 minutes.

Transfer the prawn and potato mixture to a pie dish.

Roll out the puff pastry and cover the pie dish, trimming any excess pastry.

Brush the pastry with the beaten egg.

Bake in the preheated oven for 30-40 minutes, or until the pastry is golden brown and crispy.

Allow the pie to cool for a few minutes before serving.
