How To Make Prawn & Cod Cakes

Ingredients

  • 300g prawns, peeled and deveined
  • 300g cod fillets, skinless and boneless
  • 2 eggs
  • 1/4 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 2 green onions, finely chopped
  • 2 cloves of garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a food processor, pulse the prawns and cod until coarsely chopped.

  2. In a bowl, whisk the eggs and then add the prawn and cod mixture.

  3. Add the breadcrumbs, mayonnaise, green onions, garlic, lemon juice, paprika, salt, and pepper to the bowl. Mix well to combine.

  4. Shape the mixture into small cakes and place them on a baking sheet.

  5. Heat vegetable oil in a large pan over medium heat.

  6. Fry the cakes in batches for about 2-3 minutes per side, until golden brown and cooked through.

  7. Remove the cakes from the pan and place them on a paper towel-lined plate to drain excess oil.

  8. Serve the prawn and cod cakes warm with your favorite dipping sauce.
