Ingredients

  • 500g prawns, peeled and deveined
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 red chili, deseeded and finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped coriander leaves
  • 1 egg
  • 1 tsp fish sauce
  • salt and pepper, to taste
  • oil, for frying
  • coriander sambal:
  • 1 cup fresh coriander leaves
  • 2 cloves garlic
  • 1 red chili, deseeded
  • 1 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tsp brown sugar

Instructions

  1. In a food processor, blend the prawns, garlic, onion, red chili, breadcrumbs, coriander leaves, egg, fish sauce, salt, and pepper until well combined.

  2. Shape the mixture into small patties and set aside.

  3. Heat oil in a frying pan over medium heat. Fry the prawn cakes for about 3-4 minutes on each side, until golden brown and cooked through.

  4. For the coriander sambal, blend coriander leaves, garlic, red chili, lime juice, fish sauce, and brown sugar in a food processor until smooth.

  5. Serve the prawn cakes with the coriander sambal on the side.
