How To Make Lemon Cheesecake with Baked Plums & Blackberries

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tsp lemon zest
- 2 cups cream cheese
- 1 cup granulated sugar
- 3 eggs
- 1/4 cup lemon juice
- 1/2 tsp vanilla extract
- 4 plums, sliced
- 1 cup blackberries
- 2 tbsp honey
Instructions

Preheat the oven to 325°F (160°C).

In a bowl, mix together the graham cracker crumbs, melted butter, and lemon zest. Press the mixture into the bottom of a greased 9-inch (23cm) springform pan.

In a separate bowl, beat together the cream cheese and sugar until smooth. Add the eggs, one at a time, mixing well after each addition. Stir in the lemon juice and vanilla extract.

Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.

Bake in the preheated oven for 60-70 minutes, or until the center is set and the edges are lightly golden. Remove from the oven and let cool for 10 minutes.

In the meantime, preheat the broiler. Arrange the plum slices and blackberries on top of the cheesecake. Drizzle with honey.

Place the cheesecake under the broiler for 3-4 minutes, or until the plums are tender and slightly caramelized. Watch carefully to prevent burning.

Remove from the oven and let cool completely before refrigerating for at least 4 hours, or overnight.

Before serving, release the cheesecake from the springform pan and transfer to a serving plate. Slice and enjoy!
