  • 4 mackerel fillets
  • 2 oranges, segmented
  • 1 red onion, finely chopped
  • 1 jalapeno, deseeded and finely chopped
  • 1 tablespoon of fresh cilantro, chopped
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Season the mackerel fillets with salt and pepper on both sides.

  2. Heat the olive oil in a pan over medium heat.

  3. Add the mackerel fillets to the pan and cook for 4-5 minutes on each side until golden brown and cooked through.

  4. In a bowl, combine the orange segments, red onion, jalapeno, and cilantro. Season with salt and pepper.

  5. Serve the pan-fried mackerel topped with the orange salsa.
