  • 1 pound fresh tuna steak
  • 4 cups mixed salad greens
  • 2 cups cooked green beans
  • 1 cup cherry tomatoes, halved
  • 4 boiled eggs, sliced
  • 1/2 cup Niçoise olives
  • 1/4 cup capers
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup fresh parsley leaves, chopped
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Season the tuna steak with salt and pepper. Heat a grill or skillet over medium-high heat and cook the tuna for 3-4 minutes per side, or until desired doneness. Let it rest for 5 minutes, then slice it into thin strips.

  2. In a large bowl, combine the salad greens, green beans, cherry tomatoes, boiled eggs, Niçoise olives, capers, red onion, basil, and parsley.

  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.

  4. Drizzle the dressing over the salad and toss to combine.

  5. Divide the salad among 4 plates and top with the sliced tuna.

  6. Serve immediately.
