How To Make Tuna Sweet Potato Jackets

Ingredients
- 4 medium sweet potatoes
- 2 cans of tuna, drained
- 1/4 cup mayonnaise
- 2 tbsp dijon mustard
- 1/4 cup diced red onion
- 1/4 cup diced celery
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1/4 tsp dried dill
- 1/4 cup chopped fresh parsley
Instructions

Preheat oven to 400°F (200°C).

Wash and pierce sweet potatoes with a fork. Place them directly on oven rack and bake for 45 minutes or until tender.

In a bowl, combine drained tuna, mayonnaise, dijon mustard, red onion, celery, lemon juice, salt, black pepper, paprika, dried dill, and parsley. Mix well.

Once the sweet potatoes are cooked, slice them open lengthwise and fluff the insides with a fork.

Divide the tuna mixture evenly among the sweet potatoes, spreading it out over the tops.

Place the filled sweet potatoes back in the oven for an additional 5 minutes to heat through.
