How To Make Herby Salmon & Couscous Parcels

Ingredients
- 4 salmon fillets
- 1 cup couscous
- 1 cup vegetable broth
- 2 tablespoons chopped fresh herbs (such as parsley, dill, and basil)
- 1 lemon, zested and juiced
- Salt and pepper to taste
- 4 tablespoons olive oil
Instructions

Preheat oven to 400°F (200°C).

In a medium bowl, combine couscous, vegetable broth, chopped herbs, lemon zest, lemon juice, salt, and pepper. Stir well and let sit for 5 minutes until couscous absorbs the liquid.

Lay out 4 large pieces of aluminum foil. Place a salmon fillet on each foil.

Divide the couscous mixture evenly among the salmon fillets, spreading it over the top.

Drizzle each parcel with 1 tablespoon of olive oil and season with salt and pepper.

Fold the foil over the salmon and couscous to create a parcel, sealing it tightly.

Place the parcels on a baking sheet and bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.

Remove from the oven and carefully open the parcels.

Serve the salmon and couscous parcels hot, garnished with extra herbs and lemon wedges if desired.
